Meal Plan Oct 13-18

Yes. This is another Pinterest inspired blog. But, I was inspired to document the delicious (and sometimes not-so-delicious) meals that I try out after finding on Pinterest.

I only need to worry about cooking for me and my husband, but I need to make sure anything I plan on preparing is good re-heated. My husband is working on getting his Master's in Social Work, and he has night classes three nights a week - so he gets home around 10:30pm and likes to heat up his dinner. I also like to take the left-overs into work the next day, and he has an internship that he takes left-overs to. So I don't necessarily look for 'cooking for two' recipes, since I definitely want to get a few meals out of them!

So, for my first post, I'd like to share my typical menu planning routine. Usually Sunday morning, I wake-up, pour a bowl of cereal, and sit in front of my computer and browse Pinterest for recipe ideas. I also have a very simple template in MS Word that allows me to type up the meal plan for the week, and also type what ingredients I will be needing, which becomes my shopping list.

This week probably wasn't the best week to start documenting my weekly menu plans, since hubby and I will be out of town starting Friday, so we won't need any meals for those days.

Here is my menu plan for this week:

Sunday, October 13, 2013
Swiss Chicken, from "The Girl Who Ate Everything" Blog
Creamy Cauliflower Garlic Rice from "Pinch of Yum"
Brussels Sprouts (steamed with Chicken Stock)

Monday, October 14th, 2013
Million Dollar Casserole from "Six Sisters' Stuff"
Honey Glazed Carrots from "Martha Stewart"

Tuesday, October 15th, 2013
Baked Panko Chicken from "Tasty Kitchen"
Butternut Squash Risotto from "The Realistic Nutritionist"
Brocolli

Wednesday, October 16th, 2013
Creamy White Bean and Bacon Soup from "Table for Two Blog"

Thursday, October 17th, 2013
Spicy Sausage Pasta from "Kevin & Amanda"

And as I said earlier, hubby and I are going out of town to visit my  family in Wisconsin over the weekend, so we won't be needing anything planned for Friday or Saturday. Lucky us!
